The Colombia Washed Tabi personifies the artistry and innovation of Colombian coffee production, coming from the picturesque region of Acevedo in Huila, Colombia, at an elevation of 1750 meters above sea level. This exceptional coffee is grown at Finca Las Flores, under the care of Diego and Jhoan, two brothers inspired by the legacy of their late mother, Doña Nubia. Her passion for coffee remains the driving force behind their move from traditional farming to pioneering fermentation methods and the adoption of cutting-edge technology in their processing. Today, their work is marked by the strategic use of three key machines that play a crucial role in their quest for quality and consistency. The journey from cherry to cup is marked by a high attention to detail, with each step carefully orchestrated to preserve the coffee's pristine quality. Harvested at a semi-ripe stage, the cherries undergo a carefully managed protocol designed to mitigate intense fermented flavours while enhancing their inherent characteristics. Following selection, the cherries move through a series of fermentation stages, including oxidation and thermal shock, to unlock their full potential. The fermentation is abruptly interrupted using a combination of hot and cold-water quenching, eliminating microbial load while fixing the volatile compounds released during fermentation. Precision drying serves as the final stage of the journey, where the coffee is carefully dried in a hermetically sealed stainless-steel dehumidifier until reaching optimal moisture content. This approach preserves fragrance, aroma, and taste, ensuring that each cup delivers a sensory experience of unparalleled quality and complexity.
Brewing guide
ESPRESSO
Rest for 12 days from roast date. Try 20g of coffee to yield 38g.Experiment with shot time. 20-32 seconds.
STOVETOP
Fill lower chamber with hot water. Fill filter basket with fine ground coffee.Moderate heat to extract for around 4 minutes.
PLUNGER
Pre heat pot, add 850g freshly boiled water to 50g coarse ground coffee.(17:1). Stir briefly. Wait 3-5 minutes, plunge and serve.
OUR PACKAGING
Our coffee bags are home compostable. You can pop them in your compost bin at home or put them in your FOGO bin. (Chop the bags up - the smaller the pieces, the quicker they will break down.) You may wish to use a suitable storage container such as a coffee canister to store your coffee beans once you open your coffee bag. Keep your beans out of heat and light and sealed tight.

When do you ship orders?
We roast your coffee on the Monday/Tuesday after you place your order. We post your order on Wednesday once we have completed our QA process.
How do I track my order?

When can I expect to receive my order?
Australia Post aims for delivery to Perth in 2-5 working days (via Parcel Post), to outside WA in 3-5 working days (via Express Post).
Can I pick up an online order from the roastery?
If you are local to Denmark (or visiting) you can use the code PICKUP when placing your order. We’ll get in touch to arrange a suitable time to visit.
How long will my coffee stay fresh? How should I store my coffee?
Our blends and espresso roasts taste best if you start using the coffee around 12 days after it is roasted (check the roast date stamp on every bag), and finish it up in around 2 or 3 weeks. We enjoy our filter roasts from a few days after they are roasted. Store your coffee away from light and heat, and keep the bag sealed tight.
