After an extensive search for the perfect location to cultivate coffee, Edson Luiz Ignacio found his ideal spot in the Cerrado Mineiro region, specifically in the municipality of Tapira, nestled within the Serra da
Canastra. This area, renowned for its unique combination of high altitudes—reaching up to 1,500 metres—fertile soils, and a climate marked by hot, humid summers and mild, dry winters, offered the
optimal conditions Edson sought for producing exceptional coffee.

Establishing Canastra Farm on 1,000 hectares of this fertile land, Edson committed to sustainable practices from the outset. Half of the farm's area is dedicated to preserving native vegetation, and efforts are made to protect the numerous springs and rivers traversing the property.

By implementing organic composting and utilizing biological controls, the farm not only maintains
environmental harmony but also enhances the quality of its coffee.
The farm's location at an altitude of 1,250 meters plays a crucial role in its success. This elevation,
coupled with significant temperature variations between day and night, slows the ripening process
of the coffee cherries. This gradual maturation allows for a higher concentration of sugars,
enriching the beans' flavors and aromas.
In terms of production, Canastra Farm yields approximately 40,000 bags of coffee annually. The
farm cultivates a diverse range of varieties, including Arara, Catucaí, Bourbon, Acauã, Paraíso,
Guará, and IPR 107. Embracing both traditional and innovative processing methods, the farm
employs natural, semi-washed, and fermented techniques to highlight the distinct characteristics
of each variety.
Beyond its agricultural endeavors, Canastra Farm is deeply committed to the local community. The
farm offers training programs and workshops aimed at promoting sustainable farming practices
and enhancing the well-being of its workers. Looking ahead, Edson envisions expanding the farm's
infrastructure, inaugurating a quality control laboratory, constructing guest accommodations to
welcome visitors, and planting new coffee areas to further elevate both production and quality.
Through a harmonious blend of tradition, innovation, and sustainability, Canastra Farm has
established itself as a beacon of excellence in the Brazilian coffee industry.

Brewing guide

ESPRESSO

Rest for 12 days from roast date. 
Try 20g of coffee to yield 38g.Experiment with shot time. 
20-32 seconds.

STOVETOP

Fill lower chamber with hot water. 
Fill filter basket with fine ground coffee.Moderate heat to extract for around 
4 minutes.

PLUNGER

Pre heat pot, add 850g freshly boiled water to 50g coarse ground coffee.(17:1). Stir briefly. Wait 3-5 minutes, plunge and serve.

OUR PACKAGING

Our coffee bags are home compostable. You can pop them in your compost bin at home or put them in your FOGO bin. (Chop the bags up - the smaller the pieces, the quicker they will break down.) You may wish to use a suitable storage container such as a coffee canister to store your coffee beans once you open your coffee bag. Keep your beans out of heat and light and sealed tight.

When do you ship orders?

We roast your coffee on the Monday/Tuesday after you place your order. We post your order on Wednesday once we have completed our QA process.

How do I track my order?

Your Australia Post tracking number will be emailed or texted to you. You can find tracking details in your account

When can I expect to receive my order?

Australia Post aims for delivery to Perth in 2-5 working days (via Parcel Post), to outside WA in 3-5 working days (via Express Post).

Can I pick up an online order from the roastery?

If you are local to Denmark (or visiting) you can use the code PICKUP when placing your order. We’ll get in touch to arrange a suitable time to visit.

How long will my coffee stay fresh? How should I store my coffee?

Our blends and espresso roasts taste best if you start using the coffee around 12 days after it is roasted (check the roast date stamp on every bag), and finish it up in around 2 or 3 weeks. We enjoy our filter roasts from a few days after they are roasted. Store your coffee away from light and heat, and keep the bag sealed tight.
